Lessons E02 Starter Variables
Q: How should I adjust feeding ratios when working with fresh stone-ground whole grain flour?
Freshly milled whole grains are very active; you may use much less starter per amount of flour (as low as 1–2 grams per 100 grams of flour) and you can vary hydration to manage the pace of fermentation, especially in warmer months.
Lessons E02 Starter Variables
Q: Can I maintain a day-to-day stiff starter, and what does that look like?
Stiff starters are kept with a lower hydration, typically fed daily with careful proportions to maintain stability; they're versatile and can be used to feed lavans or other starters for different bread profiles.
Lessons E02 Starter Variables
Q: Can I build a rye levain for my starter if my starter isn't maintained with rye flour?
Yes. You can feed the levain with rye flour instead of your usual mix, and you can build levains with different flours from the same mother starter; acclimation may take a bit, but it's completely workable.
Lessons E01 Beginner Starter Care
Q: What is the biggest mistake people make when feeding their starter?
Allowing acidity to build up from missed feeds or overly mature starter; regular feedings help maintain a balanced culture and avoid sluggish, overly sour dough; refrigeration can help when daily feeds are not feasible.
Lessons E01 Beginner Starter Care
Q: What are signs that my starter is in poor health?
A starter that smells strongly alcoholic or like vinegar, shows a hooch layer, a gray top, or fails to rise promptly are signs of hunger or imbalance; contamination signs like fuzzy pink mold or pink/orange streaking require discarding and starting over.
