  • Fun

fun podcast and I enjoy the variety of guests. Reason I'm not giving a five is because I truly wish that the host would talk over her guests less

  • Let them talk!

The guests are great, and I love the idea of the podcast, but Jessie could let them talk more. It really bothers me that she seems to know everything and wants to tell their stories more than she lets them speak. Great to do some research before having them on, but unnecessary to say it all.

  • Fantastic podcast!

I love this podcast. It’s a great mix of professionals and self-taught bakers, and Jessie’s enthusiasm for each topic is infectious. She is fantastic at navigating the conversation between very technical information and candid conversations with the guests. It’s become one on of the pods I look forward to each week!

  • I didn’t come here for diet tips

Really disappointed with the last episode. I’m listening to a baking podcast because I like baking. Being told that I can eat “a little something sweet” but only if it’s “seasoned with sugar” like you’d season with salt and only a BITE OF A COOKIE???? I get that sugar isn’t the best for you. But I don’t appreciate the condescension around food on a BAKING PODCAST.

I love the details she includes with each recipe she has taught me so much over the years. My daughter just gave us a few banana muffins she made and they were so good yep she got the recipe off Sally’s website. Thks for such a great podcast

Talking Points

Recent interactions between the hosts and their guests.

Nancy Silverton’s Crème Fraîche Brioche Tart (That Made Julia Child Cry Happy Tears)
Q: Was the egg added to the pre-ferment unusual for brioche, and what is the reasoning behind it?
Adding a beaten egg to the pre-ferment helps enrich the dough and contributes to a richer crumb, a practice Nancy adopted from research and experimentation in her bakery work.
Nancy Silverton’s Crème Fraîche Brioche Tart (That Made Julia Child Cry Happy Tears)
Q: Tell us why a pre-ferment is better than just adding yeast to the recipe.
A pre-ferment adds flavor by letting the flour age a bit, builds a more nuanced fermentation, and helps structure the dough for better texture in the final brioche.
Chocolate Croissants With Pastry Chef Christina Wood Of Temple Pastries
Q: What are key tips for home bakers to replicate her laminated dough technique?
She emphasizes even thickness, careful laminating right from the butter block, avoiding overfidgeting to prevent temperature rise, proper folding (letter and book folds), and using high-fat butter to achieve flexibility and better lamination.
Chocolate Croissants With Pastry Chef Christina Wood Of Temple Pastries
Q: Why is the Triple Chocolate Croissant not using a traditional Panneau Chocolat approach, and how is the chocolate incorporated?
Christina explains she wants chocolate in every bite and prefers to bake with chocolate integrated into the dough and through mini chips, avoiding the center-only chocolate approach to deliver a richer, more even chocolate experience throughout the pastry.
Chocolate Croissants With Pastry Chef Christina Wood Of Temple Pastries
Q: What sparked Christina Wood's interest in baking and how did Temple Pastries come to be?
Her passion grew from childhood experiences with family and church gatherings, evolving into a culinary pursuit after college. She started as a bakery worker, moved to Seattle, and launched Temple Pastries as a pop-up before expanding to a storefront, with croissants and laminated pastries at the core of her offering.
