  • Yes!

I love how most of the stuff they talk about vindicates how I cook. Hurray for doing the dishes before you start cooking! I can’t believe other people never clean their counters and empty their sinks before starting to cook!

  • Love Chris

I love this pod and have been listening for a couple years now. The only downside is how many episodes they feature that are from other podcasts. Not enough consistency with their own new episodes.

Talking Points

Recent interactions between the hosts and their guests.

BA Bake Club: Banana Pudding Paris-Brest
Q: My oven has a conventional mode and a convection mode. When should I use convection for baking, if ever?
Convection is great for choux as it creates an intense heat that helps with the rise; just monitor for browning.
BA Bake Club: Banana Pudding Paris-Brest
Q: Is there usually an indicator to know when it can come off the heat?
A thin layer of dough will start to collect at the bottom of your pot, indicating it's cooked enough.
BA Bake Club: Banana Pudding Paris-Brest
Q: When cooking the dough on the stove, I felt like my dough was done really fast. Is it possible to overcook at this point?
Yes, if you cook too much moisture out of it, it could be dry, but it's unlikely to overcook.
BA Bake Club: Peach-Blueberry Crumb Pie
Q: Is it better to substitute cream cheese with another soft cheese?
No, you cannot substitute cream cheese with any other soft cheese without affecting the crust.
BA Bake Club: Peach-Blueberry Crumb Pie
Q: What should you do if you can't find barely ripe peaches?
Slightly underripe fruit contains more pectin, which helps with setting, so aim for that type.
