  • Swordfish tahini recipe

Something is messed up. Too much water in the tahini sauce? Turned out very salty, overcooked and the sauce never browned.

  • Insights into food and people

I enjoyed The Splendid Table’s hands-on approach to cooking under its original host, Lynne Rossetto Kasper. After she retired, the show found a whole new mojo with Francis Lam, who is smart and unpretentious and funny, not to mention very well connected in the food world. As an interviewer, he puts his guests at ease and draws out their sometimes surprising feelings and insights. This podcast has influenced my cooking and my thinking about food, but I would probably still listen even if it didn... more

Talking Points

Recent interactions between the hosts and their guests.

768: Hands On Cooking and Hosting with Sohla & Ham El-Waylly and Restaurateur Will Guidara
Q: If you could only use one bean, black bean or chickpeas, which would you choose and why?
Sohla and Ham both emphasize the versatility of black beans, but they give each bean distinct contexts; they explain their preferences and note that both beans have unique roles depending on regional cuisines and dishes.
Culinary Masters Collection - Dr. Jessica B. Harris
Q: What sparked your interest in documenting the food of the African diaspora?
Exposure to Africa and the diaspora, combined with a curiosity about history and botany, helped her realize food stories are inseparable from history, migration, and identity, which became the backbone of her books.
Culinary Masters Collection - Dr. Jessica B. Harris
Q: How did you transition from a doctorate in Francophone theater of Senegal to a lifetime of food writing and scholarship?
Her path was less intentional than opportunistic; after college and graduate work, journalism opportunities emerged, and her background in storytelling and history led her to write about food as culture and history, not just recipes.
Culinary Masters Collection - Martin Yan
Q: Let me ask this, though. From the very beginning of your TV career, you have, like you said, 500 some odd episodes. How did the dishes you presented on these shows come about?
Yan emphasizes foundational skills and continuous learning from masters, plus a philosophy of teaching home cooks to recreate simple, seasonal Chinese dishes rather than relying on restaurant-level complexity.
Culinary Masters Collection - Martin Yan
Q: So tell us about how you got started, how you went from teaching the classes to being on TV.
He explains how teaching cooking classes at UC Davis led to reflections on TV potential, a pivotal frozen-dinner TV segment in Calgary unveiled his on-screen style, and how exposure through public television opened opportunities to host Yan Can Cook.
