Clint Cantwell - AmazingRibs.com’s President - Afterhours Encore
Q: If you started your career all over again, what would you do differently?
Clint would skip the PR phase in NYC and go straight into cooking and sharing his food with the world.
Clint Cantwell - AmazingRibs.com’s President - Afterhours Encore
Q: If you could cook for and then dine with a historical figure, who would it be and what would the menu be?
Clint imagines Abraham Lincoln with a menu centered around apples, mixing historical curiosity with a playful nod to classic American flavors.
Michael Symon - Chef and restaurateur - Encore
Q: How has your experience in fine dining influenced your approach to barbecue on TV?
My background in fine dining taught me to value precision and technique, but barbecue offered a different kind of creativity—live fire and wood, where flavor development comes from method and equipment as much as from ingredients. On TV, I try to balance entertaining storytelling with practical lessons, showing people that great barbecue is both an art and a science, and that the community around it is as important as the final dish.
Michael Symon - Chef and restaurateur - Encore
Q: What first drew you to cooking and how did your family influence your path?
I grew up in a food-driven Greek-Sicilian family, where meals were central to life and emotions ran high around the table. That early exposure, plus the hands-on experience with my mom and the push-pull with my father about pursuing cooking, steered me toward culinary school and a career in restaurants where live fire would become a cornerstone of my cooking.
Megan Day, Burnt Finger BBQ - Encore
Q: How has media exposure affected your business and recipes?
Media spikes drive interest in recipes and products, encouraging people to explore, cook more at home, and discover more items in the lineup over time.
