  • Bummed about the new format

This podcast used to be my first listen every day but now I can’t really listen anymore. The new cooking format isn’t great for audio but the Netflix version too has lost the original DNA of the show. The best part of the podcast was Dave and Chris’s chemistry and chatting about fun food topics. We don’t get any of that anymore. We didn’t get any fun Thanksgiving/Christmas content or cooking during that season. Also Dave pretending to be winging it while cooking isn’t super convincing or interes... more

  • I used to love it now it’s unlistenable

Listened every episode since 2019 and loved the deep dive talks or anything but with the recent cooking episodes its unlistenable!!! Its just pots banging around and the sound of oil sizzling for 30s at a time with talk that makes no sense or sounds like youre commentating on something not there. Dont shoehorn video in an audio listening format to promote random shows

Talking Points

Recent interactions between the hosts and their guests.

Avgolemono, Chicken and Rice, and Caesar Salad With Chris Bianco
Q: How did Chris Bianco react to Greek flavors mixing with Italian stock techniques?
Bianco expresses curiosity and notes the cross-cultural potential of combining Greek lemony elements with Italian stock depth, contributing to a broader Mediterranean approach.
Oxtails, "Chicken 66," and Science With Krishna Choudhary, PhD, and Lester Nare of the From First Principles Podcast
Q: What role does visual or hands-on learning play in your approach to teaching science, and how does that translate to cooking on the show?
We try to make science approachable by translating complex topics into accessible explanations, much like cooking demonstrations that reveal how flavors develop; we also emphasize the process of experimentation and how evidence supports conclusions.
Oxtails, "Chicken 66," and Science With Krishna Choudhary, PhD, and Lester Nare of the From First Principles Podcast
Q: How did you two get started with From First Principles and what is the core idea behind the show?
We started with private conversations and a goal to build an ESPN-like science network, focusing on breaking down fundamental concepts rather than just stating conclusions, so that people can understand how science actually works.
Italian Sunday Dinner, Betting, and Inappropriate Dinner Conversations With Cousin Sal
Q: What are three things you're going to change as gambling czar?
The guest explains a desire to broaden legal gambling oversight by allowing more regulated options, while acknowledging how the current landscape has become too permissive in some areas; they also stress the need to curb misinformation and guard against manipulative betting practices, all while keeping the experience engaging and responsible.
Dave's Trip to Paris, Great Meals He Had, and Cooking from Scratch
Q: Does the answer change for home cooks versus restaurants?
For home cooks, scratch cooking might mean making pasta from scratch or fermenting sauces, while restaurants must balance practicality with craft, often using some outsourced elements but still pursuing a core philosophy of flavor, technique, and honesty in their dishes. The key is the intention and the message the kitchen wants to convey, not simply the exclusivity of ingredients.
