  • I used to love it now it’s unlistenable

Listened every episode since 2019 and loved the deep dive talks or anything but with the recent cooking episodes its unlistenable!!! Its just pots banging around and the sound of oil sizzling for 30s at a time with talk that makes no sense or sounds like youre commentating on something not there. Dont shoehorn video in an audio listening format to promote random shows

What an amazing conversation, they talked about cooking, writing, low self-esteem and therapy; this episode felt like I was in a therapy session!! The conversation was open, honest, authentic, and inspiring! I want to re-listen again and again, and take notes!! Go listen to it—do it now!!!

  • Inspiring

I’ve been listening to your podcast every day, trying to catch up to hear all the episodes and I already found everything you speak of is educational and inspiring and relatable. Listening to just the bio on Roy Choi‘s episode gave me chills, while I am on a run in Texas summer 100° heat. But then hearing how he’s a late bloomer and having to provide after getting into cooking late in the game is literally my experience as an Asian American chef/new mom as well. Look up to you guys more than you... more

Talking Points

Recent interactions between the hosts and their guests.

Italian Sunday Dinner, Betting, and Inappropriate Dinner Conversations With Cousin Sal
Q: What are three things you're going to change as gambling czar?
The guest explains a desire to broaden legal gambling oversight by allowing more regulated options, while acknowledging how the current landscape has become too permissive in some areas; they also stress the need to curb misinformation and guard against manipulative betting practices, all while keeping the experience engaging and responsible.
Dave's Trip to Paris, Great Meals He Had, and Cooking from Scratch
Q: Does the answer change for home cooks versus restaurants?
For home cooks, scratch cooking might mean making pasta from scratch or fermenting sauces, while restaurants must balance practicality with craft, often using some outsourced elements but still pursuing a core philosophy of flavor, technique, and honesty in their dishes. The key is the intention and the message the kitchen wants to convey, not simply the exclusivity of ingredients.
Dave's Trip to Paris, Great Meals He Had, and Cooking from Scratch
Q: How much do you have to do for cooking to be scratch cooking?
Scratch cooking is not strictly defined by whether every single component is made in-house; rather, it's about a restaurant's philosophy, whether their kitchen aims to be fully self-sufficient or intentionally uses certain outside elements to achieve a broader culinary statement. Real scratch cooking emphasizes ownership, process, and a cohesive culinary voice, rather than dogmatically milling every grain or growing every ingredient.
Breakfast Burritos, Clay Pot Rice, Filming Food, and Finding a New Angle With David Ma
Q: What inspired you to transition from advertising to food filmmaking?
I wanted more control over my work and felt creative advertising wasn't allowing me to express myself.
Shabu-Shabu, the Great Chef Corey Lee and Benu, and Chris Ying
Q: Chris, how often do you do hot pot?
Chris talks about doing hot pot once every ten days during winter but avoids spicy Sichuan hot pot because of the lasting smell in the house.
