Most Texas BBQ is market style: you line up, order by the pound at the counter, then pick sides and pay, before taking a seat with your tray. This setup allows you to witness the butchering and enjoy the burnt ends while waiting, creating a sensory anticipation before the feast.

Q: Way back, Detroit starting in the industry, what was it like and what got you started in the first place?
I started as a waiter and then a night manager in Detroit bars, fell in love with tavern life, and gradually built experience that showed me hospitality beats and where I wanted to take it—toward a place focused on beer, community, and atmosphere rather than just being another generic bar.
