  • Episode 458 / emberside brewery

I live right by where tom is opening the new brewery ‘Emberside Brewery’! Very excited such an expert is coming to my neighborhood to produce some beer! Really appreciated the expertise in the episode!

This episode on regenerative practices was fascinating! Have you considered (or already done) episodes on Kernza (a perennial with soil-stabilizing roots vs. the annual barley) or Fonio (drought tolerant, which Garrett Oliver is passionate about)?

  • Great Content, Horrible Host

This podcast has a lot of great content. It has brewers from around the world talking about their beers, with information that would appeal to craft beer drinkers, home brewers, and pro brewers. But what keeps it from being a great podcast is the host. Early episodes were hosted by John Holl who both knows the brewing industry like the back of his hand and has a voice that sounds like he belongs on NPR. He asked informed questions and wasn’t afraid to ask uncomfortable questions to brewers about... more

Talking Points

Recent interactions between the hosts and their guests.

Episode 483: Cultural Collaboration and Brewing beyond the Main Strains with Suncatcher and Goldfinger, in Partnership with Omega Yeast
Q: What has been the most surprising yeast-related finding in your experiments?
That even small changes in pitch rate, temperature, or the source of a yeast strain can significantly alter flavor and mouthfeel, underscoring the value of careful, ongoing experimentation.
Episode 483: Cultural Collaboration and Brewing beyond the Main Strains with Suncatcher and Goldfinger, in Partnership with Omega Yeast
Q: How do you build a continuous through line across multiple beer styles to create a Suncatcher character?
By focusing on the raw materials, sourcing from the Midwest, and selecting yeast that can contribute a flexible character, while maintaining drinkability across styles.
485: Mike Schallau of Is/Was Is Brewing New World Saison For Modern Drinkers
Q: What role does water chemistry play in your beers?
We intentionally adjust chloride levels to soften the beer and support body, using Lake Michigan water as a base and supplementing with calcium chloride and calcium sulfate to shape mouthfeel.
485: Mike Schallau of Is/Was Is Brewing New World Saison For Modern Drinkers
Q: How do you approach mash and grain to get the desired body and dryness?
We use a single infusion mash with a low sparge temperature to stay in the conversion range and maximize simple sugars, plus a high proportion of non-barley grains like spelt to build body and maintain dryness.
485: Mike Schallau of Is/Was Is Brewing New World Saison For Modern Drinkers
Q: What is Cezanne and how do you define it at Is/Was?
Cezanne is defined by rusticity, a mix of single and mixed culture approaches, and a very dry finish. The yeast selection is important but not the sole defining factor; flavor and fermentation behavior drive the identity.
