  • Episode 458 / emberside brewery

I live right by where tom is opening the new brewery ‘Emberside Brewery’! Very excited such an expert is coming to my neighborhood to produce some beer! Really appreciated the expertise in the episode!

This episode on regenerative practices was fascinating! Have you considered (or already done) episodes on Kernza (a perennial with soil-stabilizing roots vs. the annual barley) or Fonio (drought tolerant, which Garrett Oliver is passionate about)?

  • Great Content, Horrible Host

This podcast has a lot of great content. It has brewers from around the world talking about their beers, with information that would appeal to craft beer drinkers, home brewers, and pro brewers. But what keeps it from being a great podcast is the host. Early episodes were hosted by John Holl who both knows the brewing industry like the back of his hand and has a voice that sounds like he belongs on NPR. He asked informed questions and wasn’t afraid to ask uncomfortable questions to brewers about... more

Talking Points

Recent interactions between the hosts and their guests.

470: Ryan Allen of Soul & Spirits Summons Unusual Flavors with Traditional Methods
Q: Tell me about that canvas. Tell me about that canvas of sauce as a beer itself that is designed to hold up to a variety of different flavors.
Ryan explains starting from home barbecue sauces to craft a mango-based mustard barbecue, then layering with fruit and spices to maintain color and balance, eventually building a fruit-forward base that can hold savory additions like mustard and vinegar.
468: Chris O’Connor of Prost and the Quest for Undeniable Helles and Pils
Q: How did switching to the new yeast strain change Prost's approach to lager design?
The switch reset the experimentation cycle, required adjusting maturation, pitch rates, and fermentations, and led to a wholesale overhaul of the Helles and Pilsner recipes to balance sulfur, hop character, and malt impact while preserving German lager roots.
467: Adjusting the Thiol Dial with ISM, Ology, and Berkeley Yeast
Q: Nick, how have you thought about the flavors that thiols give within your IPAs and how they fit into the beer profile?
We focus on balancing thiol-driven notes to add structure and juiciness without making the beer feel bitter; we select yeast and hops to complement thiol expression and adjust only gradually to maintain drinkability.
462: Bierstadt, New Belgium, Wayfinder, and the Anatomy of a Lager Collaboration
Q: What made you decide to pursue a collaborative lager using rice and a Mexican lager yeast?
We wanted to create a beer that could bring together each brewery's strengths—rice lager expertise, mixed hops, and a novel yeast strain—while keeping the profile balanced and drinkable, not gimmicky.
459: Zach Typinksi of Urbanrest Brews Gold Medal Pilsner Without Pilsner Malt
Q: What considerations go into your fermentation processes for these beers?
Both beers undergo cold knockouts, with Kaiser using a dry pitch and Work using a wet pitch for character adjustments.
