  • Em and Don

I only really listen to the AAB episodes with Em and Don. They're both great, super knowledgeable and I like the topics they pick. I don't listen to the brewer to brewer ones.

Talking Points

Recent interactions between the hosts and their guests.

The Salvo Advantage - How Peaceful Side Brewing is Adding Flavor Without Sacrificing Beer Loss.
Q: Are there non-financial benefits from using these hop products?
Yes. Benefits include improved shelf stability, easier handling and faster load times, less waste and debris in the system, reduced water usage for rinsing, and clearer, faster CIP processes, all contributing to a smoother operation and better overall quality.
The Salvo Advantage - How Peaceful Side Brewing is Adding Flavor Without Sacrificing Beer Loss.
Q: Chris, can you share the original hop recipe and the changes you made, including what products you used instead?
The original recipe included a mix of traditional hops (Chinook, Columbus, Trident, etc.) with a heavy dry-hop load. The changes replaced much of the pellet load with Salvo and Lupulin-based products, reduced the number of hop varieties, and kept two distinct profiles—citrus-forward American IPA and a tropical hazy—while increasing yield and shelf stability.
BONUS: Brewer to Brewer with Lee Lord and Charlie Cummings
Q: What role does water and fermentation play in their approach to lagers and other beers?
They use clean, low-mineral water with minimal salts, Leverage longer diastole rests for lagers, and focus on letting beers finish fully before bottling or kegging to ensure flavor integrity.
BONUS: Brewer to Brewer with Ben Edmunds and Jake Gardner
Q: What do you think is something about your role in a growing brewery that people don't see?
The ongoing complexity of running a multi-facility operation, including insurance, maintenance, and the need to keep systems aligned as the brewery scales, is often underappreciated; the core is keeping the core beer quality high while supporting the team.
Improving fermentation with data
Q: Brewing industry is not doing awesome. Convince me that this isn't just a toy. Convince me that this is actually worth money.
Sennos unlocks a data-driven approach that turns fermentation into a controllable, optimized process. By revealing every parameter, brewers can reduce waste, improve consistency, schedule more efficiently, and engage customers with real-time product status, which translates to higher margins and more reliable product quality.
