  • Brewing Science Heaven!

I’ve been listening to beer podcasts for well over a decade now, and MBAA's podcast is by far the best for getting the most succinct brewing industry technical knowledge! This podcast sold me on finally getting a membership with the MBAA too. Yeah, the audio/production quality for the first several episodes were garbage (when not being a brewer, I’m a broadcast journalist with the Air National Guard), but it’s much better now. Keep that in mind for the first several if you find your face conform... more

  • The best beer education out there

I love attending CBC and watching BA, ASBC and MB webcast seminars, but IMHO, this is the most educational 30 - 40 minute investment a pro brewer can make. Episode after episode is packed with valuable information.

Talking Points

Recent interactions between the hosts and their guests.

Episode 368: We Can Totally Fit That Somewhere
Q: What are practical steps to audit utilities before bringing in larger vessels or faster packaging lines?
Start with a capacity model for chiller, boiler, and compressors, then price out expansion needs for steam, power, and cooling; involve qualified personnel to assess permitting and per-foot costs, and map out where the new equipment will physically connect and operate within existing utility networks.
Episode 368: We Can Totally Fit That Somewhere
Q: Walk us through how a brewery should model core inputs like process cycle times, shrink, shift patterns, and utility constraints to locate its true bottleneck before spending money.
Begin with a complete inventory of products and plans for future products, then map every input in time, from milling to packaging; build a baseline capacity model that shows hours required per product and the resulting bottleneck, subsequently layering labor, downtime, and utility constraints to derive a realistic capacity and identify the true bottleneck.
Episode 253: CIP Fundamentals (July 2022)
Q: What are the four pillars of the cleaning center circle and how do they interact?
The four pillars are chemical concentration, mechanical energy, temperature, and time. They interact by trade-offs: increasing temperature can reduce needed concentration or time, but can risk safety and equipment; increasing mechanical energy or time can compensate for lower temperature or concentration; optimal cleaning comes from balancing all four for the specific equipment and soil.
Episode 240: Understanding the Risk of Can Pressure Failures (Feb 2022)
Q: What practical steps should a brewery take when applying these findings to real-world canning and pasteurization processes?
Develop a visual, color-coded reference tool tailored to your container's exact PSI rating and your product's CO2 level and temperature targets; validate the tool with actual tests on your lines; rotate lids and ensure fresh components; maintain tight control of fill heights to manage headspace; implement robust CO2 measurement practices and instrument calibration; and set realistic client expectations when approaching the edge of the safe zone to avoid costly failures.
Episode 240: Understanding the Risk of Can Pressure Failures (Feb 2022)
Q: Okay, you can't just make a reference chart without validating the numbers. What safety considerations and methods did you use during the experiments?
We used a temperature-controlled water bath to simulate tunnel pasteurization, while monitoring both the water bath and the internal can temperature, holding at target temperatures for a defined duration to observe when and how cans failed. We wore safety precautions and evaluated both lid and dome failures, noting that older lids tend to fail earlier due to metal relaxation from aging. We also weighed the cans before testing to correlate fill height with performance, and we emphasized repeatability by taking multiple measurements to confirm numerical consistency.
