  • Inspiring

Just found this about a month ago, and have been listening voraciously. I’m a chef/cook as well and love hearing about work life balance, and how everyone is working on their own systems. I love this show! Keep up the great job! Can’t wait to visit your newer spot in PDX next time I’m in town. Love running into you in Napa.

Talking Points

Recent interactions between the hosts and their guests.

Chef Johnny Courtney
Q: Did you have mentors guiding you through opening a restaurant, or was it all self-taught?
It was a bit of both. My wife brought a strong business mindset and marketing sense, while I leaned on mentors and peers from our networks to learn the business side, though a lot of the practical, day-to-day was learned by doing and through trial and error as we opened our space.
Chef Johnny Courtney
Q: What was the moment that convinced you to open your own restaurant with your wife?
After being passed over for a job at Candlestick, I decided to stay and then eventually realized I needed to build something with my wife. A broken foot and a rough closing period led us to re-evaluate our path, and the desire to control our own project pushed us to take the plunge and open our own place.
Chef Ken Frank
Q: What's your favorite food city?
Paris, but Tokyo and London have also become amazing food cities.
Chef Ken Frank
Q: What is your secret to making a restaurant quality dish at home?
It's not just the ingredients. It's how you bring them to life, starting with the right tools.
Chef Nini Nguyen
Q: What has been your biggest culinary flop?
Anything I have cooked on TOC.
