I was looking for a podcast with Evan Funke and I came across. Andrew talks to Chefs episode with him. 13 minute talk about sponsors and absolutely random stuff before getting into the interview is a complete dealbreaker. I don’t have time for that.

  • Let guests talk more

Interesting show, but like so many podcasts the host seems more interested in sharing his views on any given topic over listening to what his guests have to say and giving them space to talk.

Talking Points

Recent interactions between the hosts and their guests.

Allison Robicelli (Storyteller, Consultant, Chef, Writer)
Q: How do you define yourself professionally today?
She identifies as a professional storyteller who finds and creates stories, with cooking serving as a conduit to explore human experiences, history, and culture.
Allison Robicelli (Storyteller, Consultant, Chef, Writer)
Q: What did your childhood look like and how did it lead you toward cooking?
Her childhood in Bay Ridge, Brooklyn, a loud Italian family environment, and later experiences in New York City shaped her fascination with food as a way to connect, storytelling through cooking, and building community.
Akwasi Brenya-Mensa (Tatale: The Restaurant, Dining Series, and Other Iterations)
Q: How do you navigate staying true to traditional Ghanaian flavors while making them accessible to a global audience?
He says there is no single right path, and chefs must decide how to present their food based on why they cook it; his approach blends traditional flavors with contemporary techniques and presentation, tested through experiences in London and Ghana and refined after a stage in a London restaurant.
Akwasi Brenya-Mensa (Tatale: The Restaurant, Dining Series, and Other Iterations)
Q: What were the early stirrings that pointed you toward cooking professionally?
He describes starting with burgers in 2010 as a relatable entry point, learning through trial and error, and gradually turning a street-food pop-up into a formal dining concept, while always seeking to learn from large-scale operations and then apply those lessons to his own storytelling through food.
Scott Conant (multiple restaurants, TV's Chopped, and Martone Street pasta sauces)
Q: How did your early kitchens influence your approach to cooking and restaurant development?
Conant explains that his foundational experiences, including time at San Domenico and City Eatery, taught him to blend rustic Italian sensibilities with high-end technique, which became a throughline in his later restaurants and in the Martone Street jarred sauces.
