  • I hope the sound is better down the line

I have listened to the first three episodes and I am audio only, so I have no point of reference for the YouTube production questions , but the sound is ridiculously low. THEN THE ADS PLAY!!!! DAMN. Then the sound is stupid quiet again. Please, I hope this is fixed before the end of the season. I love ATK and I continue listening with the hope that the sound quality improves.

  • More Dan and Lan!

Excellent interview podcast that lets ATK breath a little and get away frkm the stove. I would love if Lan joined Dan as the permanent cohost, but that’s just my opinion!

Talking Points

Recent interactions between the hosts and their guests.

Grace Young on Championing Chinatowns
Q: When life hands you lemons, what would you make?
I'd make ginger, lemon, honey tea, plus a lemon-centric braise that showcases how acidity can be balanced in a well-seasoned wok, turning simple ingredients into a memorable dish.
Grace Young on Championing Chinatowns
Q: If you could teach the home cooks of America one thing that they're missing, that they should know, what would that be?
Learn how to stir fry. It's practical, fast, nutritious, and delicious, and mastering it gives a lasting connection to cooking from the wok rather than relying on shortcuts.
Introducing: The Side Dish
Q: What's a fun dinner to make together that isn't too labor-intensive?
Homemade pasta and sauce is a lovely option that's tactile and fun to make.
Introducing: The Side Dish
Q: What are some best tips for scaling down a recipe to make it for two people?
The best tip would be to buy America's Test Kitchen's Cooking for Two or Baking for Two cookbooks, and consider freezing half of larger entrees.
Rick Martinez Hates the Word "Authentic"
Q: What inspires color choice patterns in your nails?
I started painting my nails for fun and to add a pop of color since I'm constantly looking at my hands while cooking.
