  • Subway

Subway does not have company stores as they know they are not profitable. When they did have some they didn’t run well. Over the decades Subway brought people from the field that were not good leaders and/or weak managers (dept heads). I was surprised to see how generally weak employees were at HQ.

  • Great content, spotty audio

I love the content and insights of each episode but audio quality needs improvement. The latest Raising Canes episode was extremely hard to hear given the use and recording of a speaker phone. Suggestion: record all episodes through Skype or other online platform.

  • Halal guys

Really people were coming from California and Canada to eat their food from a cart in NYC. And their delivery via 3rd party is 35% of their business. Stop the fake news.

Talking Points

Recent interactions between the hosts and their guests.

Why consumers don’t think their restaurant visits are worth it
Q: Do you have data on whether delivery is worth it, especially for younger generations who still order it?
The data shows delivery remains common, particularly among Gen Z, due to convenience, but the worth-it score for delivery varies by generation and payer dynamics; eventually, as people grow older and pay for their own orders, their valuation of delivery may shift.
Why consumers don’t think their restaurant visits are worth it
Q: Do you have data on what drives the worth-it perception and where operators should invest to improve it?
Lisa shares that price increases, perceived food quality, and the overall experience (including how long things take and how staff perform) drive the worth-it perception. She recommends prioritizing training and people, as well as thoughtful use of technology to enhance joy rather than just automate.
How Kilwins is adapting to life under new owners
Q: All right, so what's going on at Kilwins right now, sir?
Brian explains that Kilwins, an 80-year-old brand, is undergoing a controlled evolution under new ownership, investing in IT, CRM, and loyalty while expanding store formats and marketing to grow visibility and drive traffic, all without losing the brand's core values and experiential focus.
How rising gas prices will affect restaurant sales
Q: What differences did past gas-price spikes reveal about consumer behavior?
Past spikes showed episodic drag on traffic during peaks (e.g., 2008) but variable responses depending on inflation, consumer willingness to pay, and broader economic context such as post-COVID dynamics in 2022.
How rising gas prices will affect restaurant sales
Q: How will gas prices affect restaurant traffic and profitability?
Gas costs reduce disposable income, especially for lower- to middle-income consumers, which dampens traffic; restaurants may need to lean into value and efficiency, monitor beef costs, and consider cautious pricing strategies to maintain traffic while protecting margins.
