  • Paul K

Paul has the perfect podcast voice, he knows wine and gets great guests. Paul does tend to forget us, the podcast subscriber though. He typically tells the same personal stories to every guest which I’m sure they have never heard before. Problem is, we the faithful listener have heard them, many times. I’ll keep listening and suggest you do to. Just wish Paul would think about that, let his guests talk more, that’s why we listen, to hear them.

There’s a great deal of interesting and valuable information here. However, it might be helpful for the listener to note that the attempts here to steer around political discourse are apparent and tacitly reflect a certain worldview

Talking Points

Is Port Wine Dying? The Battle Between Tradition and Millennial/Gen Z Tastes. Rupert Symington
Q: Why did Port shift toward tawny and away from traditional ruby and vintage-heavy formats in some markets?
Tawny wines, especially 10- and 20-year-old, have found demand in warmer markets and are often served chilled, broadening the audience beyond traditional collectors while still maintaining premium perceived quality.
Is Port Wine Dying? The Battle Between Tradition and Millennial/Gen Z Tastes. Rupert Symington
Q: Can you start a winery in Portugal given the regulatory environment around Port production?
Yes, but you must navigate capital-intensive rules, such as having stock three times what you sell and obtaining licenses to plant vines and to process them into Port; these factors influence entry and scale.
Bringing Georgia to Your Glass: Mallory Tsipouria's Journey Promoting Ancient Wines in the US
Q: What is in the horizon for the business?
The guest describes an aggressive expansion plan across California and beyond, including aiming for about 300 stores and significant tasting programs, while pursuing partnerships with distributors and retailers.
Navigating Wine Lists and Confidence: A Conversation with Natalie McLean
Q: What should listeners consider when evaluating wine ratings and opinions from critics?
Paul and Natalie discuss that ratings are useful but should be weighed against personal palate, and suggest finding a trusted reviewer whose tastes align with yours, while paying attention to descriptive language rather than numbers alone.
Navigating Wine Lists and Confidence: A Conversation with Natalie McLean
Q: How do you approach wine lists in restaurants to avoid intimidation?
Natalie emphasizes using the sommelier as a guide, signaling budget through thoughtful communication about preferences, and focusing on style and pairing rather than chasing high-priced or highly rated bottles without alignment to taste.
