  • So Much Wasted Potential

GuildSomm did a great job choosing this topic that’s so relevant to us collectors of fine wine from Napa Valley. Unfortunately, Chris Tanghe seemed to sleepwalk his way through the interview and seemed completely uninterested in engaging with Mr. Pearson. When the topic turned to the all important question of how LVMH was spending its considerable resources to overhaul vineyard farming practices at this venerable property, Mr. Tanghe declared they were out of time, and the topic was cast aside. ... more

Talking Points

Recent interactions between the hosts and their guests.

Alternative Wine Packaging with Melissa Saunders MW
Q: How long can wine last in a bag-in-box after opening?
If the wine is high-quality to begin with and properly prepared (including sulfites at safe minimums), it can stay fresh for about a month in the box after opening, with up to 9–12 months from fill date before opening as a general quality control guideline, varying with wine style and storage conditions.
Alternative Wine Packaging with Melissa Saunders MW
Q: What are the environmental trade-offs of bag-in-box versus glass bottles?
Bibs reduce emissions and waste when considering the full packaging system, especially since glass production is highly energy-intensive. While the bladder adds a plastic component, overall, bag-in-box presents a lower carbon footprint and easier recyclability in many communities, though recycling systems are imperfect.
Alternative Wine Packaging with Melissa Saunders MW
Q: Where did bag-in-box come from and who championed it initially?
Box wine began in the 1950s in Australia as a practical solution for larger volumes and a tap that controls oxygen exposure. It was initially used for mass-produced wines, which contributed to the stereotype that box wine was for lower quality. The opportunity lies in showcasing that high-quality wine can be packaged in bibs without sacrificing integrity.
Beef, Butchery, and Non-Classic Pairings with Kevin Smith and Nelson Daquip
Q: How do you approach selecting beef for your butchery program?
Kevin discusses the importance of sourcing from smaller farms, and the distinctions between commodity and non-commodity beef.
Beef, Butchery, and Non-Classic Pairings with Kevin Smith and Nelson Daquip
Q: How did you get into butchery and cooking?
Kevin shares that he was influenced by his mother, began cooking at a young age, and developed his skills through necessity during his teenage years.
