木薯原產南美洲，16世紀由葡萄牙人帶入非洲，後來成為撒哈拉以南最重要的糧食之一。它耐旱、耐貧瘠，甚至被稱為「飢荒儲備作物」，如今，全世界超過5億人依賴木薯維生，剛果更有超過9成人口以木薯為主食。
在剛果，木薯不只吃根莖，連葉子也入菜，木薯葉會與洋蔥、辣椒、魚、椰奶一起慢煮，形成濃郁辛香的家常料理。就連國菜「穆安巴雞」... more
印度洋上的模里西斯——被稱為「天堂原型」的熱帶島嶼。除了海灘與潟湖，這裡的餐桌，也藏著殖民與移民交織的歷史。
這裡，有著「百萬富翁沙拉」之稱的棕櫚心沙拉。之所以能稱作「百萬」，原因在於：棕櫚心。棕櫚心是棕櫚樹頂端的嫩芽核心，一棵樹需生長7到10年才能採收，但取出樹心後，整棵樹也會死亡，因此十分珍貴。
法國殖民時期，法國人將這種口感清甜、帶有堅果香的食材，以冷盤方式呈現，搭配海鮮與油醋醬，成為殖民總督宴席上的奢華象徵。

它，不只是一道料理，而是一段橫跨三大洲的味覺旅程，這集我們要進入世界「前三貧窮」國家之一——莫三比克，認識一道名字可愛、滋味卻火辣無比的：霹靂霹靂雞（Piri-Piri Chicken）。
🔥Piri-Piri意為「胡椒」，卻遠比胡椒更猛烈，靈魂來自「非洲鳥眼椒」——原產中南美洲，卻在非洲熱帶氣候中迅速擴散的小辣椒🌶️，是這道料理無可取代的核心風味。
這道菜的誕生，其實是一段殖民交會的結果：15世紀葡萄牙人將辣椒帶入非洲，結合當地食材與歐洲香料，發展出以大蒜、醋調製的霹靂霹靂醬。
