Recent interactions between the hosts and their guests.

Staying Open: Hawksmoor, London
Q: What is one thing you wish you knew earlier that you now know about the restaurant business?
Know that you must work as hard on the business side as you do on the customer experience; the mechanics of running the business are just as critical for long-term sustainability as the food and service.
Staying Open: Gymkhana, London
Q: What would you tell someone who wants to open a restaurant?
Open with passion and love for the craft, but go in with eyes open to the challenges and risks, do thorough research, and be prepared to learn and adapt quickly.
Staying Open: Gymkhana, London
Q: You've raised capital for expansion. How did you approach funding, and what have you learned about investor relationships?
Capital raising was approached cautiously, leveraging networks and private connections; over time they learned to structure deals, manage expectations, and balance equity with control, while maintaining focus on long-term brand growth.
Staying Open: Pablo Eggsgobao, Newcastle
Q: What advice would you give someone who would like to open a restaurant or hospitality business?
Just do it. Make a plan, make it happen, and expect that it will be hard but that you can adapt and succeed if you commit. Don't let skeptics deter you; take the leap and build from there.
Staying Open: Pablo Eggsgobao, Newcastle
Q: What's a bit of advice that you know now, that you wish you knew when you first opened?
Focus on the finances and the admin piece. If you can't, find someone who does and start from the beginning, so you don't have years of mess to untangle or risk sinking the business due to poor management of vital aspects like finances and admin.
