Itching to visit Beaune after this excellent episode of David’s endlessly fascinating The Drinking Hour podcast. A perfectly pitched chat that left me no choice but to grab a corkscrew and pour a glass.

Talking Points

Recent interactions between the hosts and their guests.

Episode 257 - Napa with Jaime Araujo
Q: Yeah. And you have embraced making wine in a slightly different way to many estate-based producers. Just explain how Trois Noix works.
Trois Noix operates as a community-focused model using a custom-crush facility to share equipment and space, sourcing grapes from partner vineyards, and engaging in collaborative farming practices with local growers to keep costs manageable while producing a diverse range of wines.
Episode 256 - Billy Abbott on China’s spirits
Q: What's happening with Chinese whisky and other Chinese-branded spirits?
There's a push to establish domestic whisky styles inspired by Scotland and other regions, with some brands like Lai Zhou producing award-winning peated expressions and experimenting with local oaks, while big players invest in China to balance local demand with international ambitions.
Episode 256 - Billy Abbott on China’s spirits
Q: How do you assess quality across such a broad and varied category?
Quality assessment blends objective technical cues from producers with subjective flavor and texture evaluation, recognizing that Western and Chinese judging criteria can differ, and that consumer appeal often hinges more on flavor balance than production methodology.
Episode 256 - Billy Abbott on China’s spirits
Q: So what's driving the growth of Baijiu's export and interest abroad?
There is growing awareness and accessibility outside China, plus a curious mix of expat communities and a global palate increasingly open to diverse spirits. At the same time, gifting culture and premiumization of Baijiu help drive international curiosity and price premiums for top-tier brands like Mao Tai.
Episode 254 - John Hall on gin’s ‘golden ratio’
Q: What went wrong while recreating that bathtub gin?
Hall explains the trial and error process that led him to develop Aureus Vita, focusing on balancing botanical proportions.
