    I’m not in the industry at all but I love this podcast and will listen to each one! I started listening when this transitioned to The Buildout and have listened to each episode. I don’t live in New York but the stories they tell make me want to buy a plane ticket every week. It’s so fun to have a peak behind the curtain on some amazing cocktail bars, their owners or managers, and the background on those people.

  • Love this show!!

    This is my new favorite podcast. I love the range of guests, stories about the buildout of each of the bars and the background of each of the owners. It’s really unique and compelling and makes me want to run to each of them and try the drinks (and food), they reference on the show. The host, Adam, asks excellent questions that you’re likely not going to hear in other interviews with these people.   • it’s ok

    not as into the new format. the buildout is fine but i really miss cocktail college. the buildout doesn’t have as broad a audience or scope of interest. it seems very industry specific and i find myself bored with the topic after a while each episode. it’s well produced and somewhat interesting but not enough to pull me back in episode after episode.

  • Fantastic podcast.

    There are several things I enjoy about this podcast, and I generally do not leave reviews, but I feel that Cocktail College is so worth it. Tim’s hosting and interviewing style is so on point. It drives the episodes with beneficial information and interesting banter. It doesn’t meander off topic and take forever to get back to it. As a home bartender that is new to a lot of this, I have learned so much and enjoy the podcast so much.

The founders faced limited financing, a difficult neighborhood, and early cash-flow struggles, but their burning passion for the project, a strong network, and weekends carrying volumes kept Cure afloat until a breakthrough around year three.

They started with a classic-forward menu and a single original, then built a team of trusted partners (Kirk Estopanol, Danny Valdez, etc.) who shared a long-term commitment to the brand and hospitality ethos.

A close friend, Matthew Conkey, believed in the potential of Ferret Street, helped secure the building, and together they secured financing despite a risky neighborhood and post-Katrina challenges, proving persistence and network-based support are crucial.
