佇17世紀ê臺灣，因為無仝民族ê遷徙佮交流，因此食材和料理出現多元融合ê面腔。比如園稻（旱稻）、薏仁、豆仔類、麥仔佮高粱等。其中米毋但是主食，閣是激酒重要ê原料，當時ê唐山贌商就是用米激燒酒販賣，這種米酒也成做山客社群間普遍受喜愛ê酒品之一。有關米ê種類，早期臺灣原住民主要耕作ê米是園稻（旱稻）；一直到漢人大量來臺以後，中國稻作尖仔米（秈稻）佮秫米（糯稻）才取代園稻（旱稻）普遍性ê種作。
