日本清酒研究學院SSI(Sake Service Institute)採用了四象限的分類法則，將多樣的日本酒以薰、爽、醇、熟，分為四個類別來做為味覺的分類辨識。而日本酒的搭餐，則是對於食物的原味，有放大的作用，比方說，可以讓牡丹蝦的鮮甜成為記憶點，也可以遮蔽生蠔的腥味，乃至於帶出鮮味。如果對於清酒停留在傳統的印象，只能搭配日式料理，那就太可惜了，像很多年輕人喜歡的義大利料理，正適合日本酒來畫龍點睛。
