  • Really excellent

In some ways this is the perfect podcast: clear, concise, focused, and relevant. Each week the hosts - who have a great professional chemistry - answer one question for new to newish coffee roasters. So if you’re just starting out as a home roaster, chances are you’ll find a bunch of episodes that answer questions you have (or realize you should have). And maybe best of all they do it FAST - each episode is well under 20 minutes.

When Has 1st Crack *Really* Started?
Q: When first crack hits, should I be trying to get through first crack fast as possible or try to slow down the first crack process?
Different roasters have varying methods; typically, for a lighter roast, slowing down after first crack helps achieve desired flavor profiles.
When Has 1st Crack *Really* Started?
Q: Could you help me understand first crack a bit more?
Catherine explains that first crack is marked by the continuous cracking of the beans as moisture escapes, and it's important to be consistent in recording its timing.
"What If You Can't Hear 1st Crack?"
Q: What is the best way to determine when you're entering the developmental phase if you can't hear the first crack?
The best way is to monitor the time and temperature of the roast, observe the beans for visual cues, and look for an increase in chaff release.
Why are some coffees more acidic than others?
Q: How do you explain acidity, especially from different beans/roasts?
Acidity in coffee can be affected by roasting techniques and brewing methods; different beans like Ethiopian coffee can exhibit various acidity levels based on these factors.
