  • Really excellent

In some ways this is the perfect podcast: clear, concise, focused, and relevant. Each week the hosts - who have a great professional chemistry - answer one question for new to newish coffee roasters. So if you’re just starting out as a home roaster, chances are you’ll find a bunch of episodes that answer questions you have (or realize you should have). And maybe best of all they do it FAST - each episode is well under 20 minutes.

  • Mandatory Listening for Self Roasters

If you roast your own coffee, or think you might like to roast your own coffee, think it would be too difficult or expensive to roast your own coffee, then you should listen to this podcast.

Talking Points

Recent interactions between the hosts and their guests.

3 Keys to Crafting a Perfect Blend
Q: What do you have to say about some blends?
Stephen discusses that blends are popular because they allow for consistency, body, and complexity. He advises starting with separate roasts for each coffee, testing with simple proportions, and iterating on ratios until the blend achieves the desired balance. He also notes that blends can rescue less complex single origins by adding depth and a well-rounded cup, especially in espresso applications.
3 Keys to Crafting a Perfect Blend
Q: The results have been very pleasing. I may want to try very soon experimenting with blending coffee beans and understand that it is usually best done by roasting each variety separately before blending. How do you choose coffees for blending to mix or enhance different characteristics? Which bean characteristics are complementary in blending?
Catherine explains that blending starts with identifying what you want in the cup, often balancing fruity, chocolatey, and caramel notes across origins. She emphasizes tasting each coffee individually first to understand its baseline and then testing blends by adjusting the percentages (e.g., 40/30/30) before committing to larger roasts, and using mid-roast profiles to preserve origin characteristics while shaping the blend.
"Newbie Roaster Here, Does This Look Normal?"
Q: Does this look normal for a 20-minute roast using an air fryer with a rotating drum at 400 degrees Fahrenheit?
Catherine notes that the roast shows underdevelopment with uneven color and high chaff, suggesting that 400 degrees may be insufficient and that the roast likely needs more agitation and/or heat to reach a solid first crack.
Is AI Useful for Home Coffee Roasters?
Q: Do you see a category of scoring just by visual inspection? Or should any score you see include tasting?
Visual scoring is currently limited to roast level and defects detected visually; comprehensive quality scoring still requires sensory tasting, and AI's role would be to support, not replace, human judgment in tasting.
Is Co-Fermenting Just Artificial Flavoring?
Q: Al asks about co-fermented coffees and recommendations for crazy and unique coffees.
Catherine explains several processing methods (anaerobic natural, carbonic maceration, aerobic fermentation, natural, dried on the tree) and emphasizes evaluating whether the result tastes good and fits the farm's goals; they're open to experimentation but stress personal preference and quality.
