  • A Great Listen

Absolutely fantastic to listen to Theo and Adam. Adam is a top chef and as Theo says at the end he’s a humble man but cares a lot about his team and customers. Which during lockdown I can personally vouch for . I would highly recommend watching this episode

Talking Points

Recent interactions between the hosts and their guests.

Why British Italian Food Was Wrong: Gennaro Contaldo on Carbonara Crimes & Mentoring Jamie Oliver
Q: What are you going to cook for us?
I'm going to cook a very local Amalfi Coast dish—Totone Patate, squid with potatoes—with a twist using the best local tomatoes, garlic, and parsley; essentially a squid and potato preparation finished with pasta in the sauce.
How a Track Athlete Became a Top London Chef: Kerth Gumbs on Caribbean Cuisine & His Mother's Legacy
Q: If you weren't a chef, which profession would you have gone into?
Kerth suggests he might have pursued dance or athletics, highlighting his love for movement and how performance could have complemented a creative career, but he ultimately chose cooking and sport as his paths.
The Truth About British Seafood: Jack Stein on Taking Over the Family Restaurant Empire
Q: How does the collaboration with your dad influence your cooking now?
He supports a simplified, storytelling approach that lets fishermen and farmers' stories come through in the dish, while gradually trusting me to carry the legacy forward without overcomplicating things.
The Truth About British Seafood: Jack Stein on Taking Over the Family Restaurant Empire
Q: What are you going to cook today?
Crab Linguini, a dish inspired by family memories and emphasizing simple, fresh ingredients with a modern twist.
Why You Should Stop Wasting Food: Max La Manna's Guide to Using Every Part of the Ingredient
Q: What dish are you going to cook for us today?
Thanks for having me. We're making a broccoli stem tartare.
