Q: Could you give a quick elevator pitch on the impacts of RO on maple syrup flavor based on your research?
RO concentrates sap up to about 22 percent without a detectable overall flavor difference in sensory tests, but it reduces heat exposure time; flavor can be preserved by adjusting evaporator operation to allow more time for flavor development in the front pans or by reconfiguring the setup to compensate for higher concentrations.

Q: Are there other reactions happening in the evaporator that help contribute to flavor?
The inversion of sucrose by microbial action and acid hydrolysis creates invert sugars that feed Maillard and other browning reactions, while the overall caramelization is present but not the dominant pathway; processing parameters largely govern which reactions prevail.
