  • For all beer lovers!

A great mix of the history and science of beer, as well as a behind-the-scenes look at owning and operating a brewery. Always interesting; always entertaining. My only wish…that I lived closer to McFleshmans to have more opportunities to enjoy their pints!

Sincerely, McFleshmans’ #1 fan from MN!

  • Great

Big fan of this Podcast. So much so, my Bestie and I made the five hour trek to grab a pint (or two) and check this place out. It did not disappoint. Met Joel and had the bell run as a I ordered a 547. Not being an IPA guy, it was very good. Great experience and look forward to making another visit. My only regret, missing Gary by a couple of hours. Next time!

Gary Arndt on Beer, Host of Everything Everywhere Daily
Q: Gary, how do you approach helping a small brewery tell their story without getting lost in the nerdy details?
He emphasizes telling a coherent, customer-friendly story that keeps the science interesting but accessible, focusing on tangible outcomes like unique processes and the people behind the beer rather than raw data alone.

Q: What is Small Batch Standard's elevator pitch?

Working Draft Beer Co Brews Traditional Pilsners w/ Co-founder Clint Lohman
Q: How do you view the balance between traditional lager techniques and experimentation with adjuncts like wild rice or smoke malt?
He describes a narrow, thoughtful use of adjuncts (about 10-15% wild rice with a subtle cherrywood smoke) to create unique but still drinkable lagers, highlighting a return to traditional malt base with careful innovation.
Working Draft Beer Co Brews Traditional Pilsners w/ Co-founder Clint Lohman
Q: Why does decoction play a role in your pilsner, and how is it implemented on your system?
Clint explains the decoction steps, including a temperature-up mash and a subsequent long boil, to unlock a richer malt and flavor profile, and notes their pilot system allows testing and scaling these steps for their main batch.
Working Draft Beer Co Brews Traditional Pilsners w/ Co-founder Clint Lohman
Q: What is something that when you've been diving into the complexities of a lager, that was like a light-bulb moment that changed your approach?
Clint emphasizes that achieving clean fermentation and removing harsh compounds early dramatically improves the final lager; this insight changed how they manage hops, proteins, and fermentation cleanliness to produce a smoother, more drinkable beer.
