  • ICE in a deer cavity?

    Love the show!

I listened to the Derris Burnett episode and he mentioned getting deer on ice a few times. I’ve always been told to avoid putting ice in a deer cavity because the water will cause bacteria to grow.

I’ve always field dressed and placed a stick in the chest cavity to keep it open until I get to the cooler.

    So, Ice is ok?

    Thanks!

Q: Tell me about growing up. I'm going to assume hunting or archery, something was in your childhood. Is that correct?
Scot mentions he grew up hunting and fishing, not starting bow hunting until his mid to late teens.
FFOD288 : BBQ, Wild Game & Good Times with Malcolm Reed
Q: What kind of equipment would you tell a weekend guy who's wanting to try smoking meat?
I usually always still steer somebody to get them a Weber kettle and learn to use it.
FFOD288 : BBQ, Wild Game & Good Times with Malcolm Reed
Q: What do people do wrong with Wild Game, especially venison?
They often overcook it and fail to properly process the meat, which can lead to gaminess and tough textures.

Q: Tell me about your little brother.
Jim shares a touching story about his younger brother, who suffered a brain injury from a car accident and how that experience influences his work at the farm.
