Howard explains that he is more of a wine enthusiast and educator than a formal sommelier by title, and that his entry came through his work at Kaiping Culinary School, where he trained chefs and later expanded into sommelier education.

Q: There are certain elements in wine service that sommeliers take for granted, like glassware. How has glassware evolved from being a functional object to something that emotionally expresses a wine's character?
For us, the evolution is a triple focus: functionality, design as an interior object, and sensoric capabilities that enhance the wine's qualities. Through listening to sommeliers and winemakers, we've shifted toward glasses that can amplify freshness, balance mouthfeel, and preserve the wine's integrity, while still being robust enough for daily restaurant use.
