It's better to have a constant temperature environment without fluctuations; consistent storage is key.

Q: What happens if one client gets a 98 and the other one gets an 89 or 92? Do they come to you and say, why aren't you working hard enough for me?
It doesn't happen too often, but it did happen a couple of times with Ren and Gene in particular, because Gene right out of the park with Screaming Eagle got 99 plus, and Ren was getting nice scores as well, but not as high. They were both different properties, and there's no way I can make the wines taste the same, yet he'd elbow me a little and say, hey, it's my turn.
