Whiskey Lens Ep. 3: Independent Bottling, Single Casks & Impex Beverage with Sam Filmus
Q: How did Impex Beverage start and what drove your shift toward independent bottling?
Sam explains his background in import distribution and how the need to diversify beyond ethnic products led to embracing single Scotch expressions and eventually starting independent bottling with partners like Signatory and Gordon MacPhail.
393: The Dalmore's Newest US Release — Sherry Cask Secrets and Maturation with Craig Bridger
Q: For you all, is it one-to-one, or are these Sherry casks bigger than one bourbon barrel to one Sherry barrel? How does that work for you all to create the secondary maturation for five years for this really beautiful product?
The process starts with initial maturation in first-fill Bourbons to build a foundation, then finishes in wine casks to pull the influence of the wine more than the wood, creating a balanced, wine-driven finish rather than a dominant oak profile.
392: How Chip Tate Blends Bourbon | Gambit No. 6 & Ampersand
Q: What role does toasting play in shaping Gambit No. 6's flavor, and how do you manage the balance between extraction and wood character?
Toasting depth and method critically impact extraction and flavor development. Deeper toasts release different compounds but can also reduce lignin, changing structure. I use a variety of toasts—some very long and hot, others more measured—to sculpt the wood's contributions, ensuring the final blend retains fruit, spice, and vanilla without overwhelming the palate. Temperature and time profiles are precisely managed to avoid over-tannin or raw wood notes.
392: How Chip Tate Blends Bourbon | Gambit No. 6 & Ampersand
Q: You've talked about Gambit No. 6 as a wine-forward bourbon finished in multiple cask types. Can you explain how you decide which wines and which barrels to blend together?
I start with the concept and desired flavor structure, then select wines with complementary tannic and fruit profiles. The 85% Chardonnay base is finished with five barrel types (Oloroso, Tokaji, Muscatel, Apple Brandy, and a range of toasted Chardonnay variants) to add depth, spice, and fruit to balance the tannins from Cabernet Sauvignon and the sweetness from the fruit layers. The goal is a cohesive, multi-layered whiskey that remains approachable and session-friendly.
Inside Private Cask Ownership: Rare Scotch, Bespoke Whisky & James Mackay of Artisan Cask
Q: What are the entry points and minimums to get involved with Artisan Cask?
The program starts with an entry point around 20 years of age and roughly 80,000 USD per cask, with a calendar of owner events and a process designed to ensure value and exclusivity.
