The podcast itself is informative and they have great interviews. I’ve been introduced to so many different brands and learned a lot about bourbon and other American whiskey by listening. The real amazing part is the community that goes along with the podcast. If you want to get involved further they make is so easy and approachable! I’ve recommended this podcast to people in real life so I may as well do it here too! If you like whiskey this podcast is a great listen!

Talking Points

Recent interactions between the hosts and their guests.

373: Bottled-in-Bond Organic Bourbon with Cathedral Ledge’s Chris Burke
Q: How did COVID affect the build and launch of Cathedral Ledge?
COVID caused delays in financing and construction, but we adapted by staying flexible, prioritizing essential infrastructure, and leveraging direct-to-consumer channels and farmers markets to reach customers.
373: Bottled-in-Bond Organic Bourbon with Cathedral Ledge’s Chris Burke
Q: Why did you choose a 50-50 blend of three- and four-year barrels for your BiB product?
We did blind tastings with friends and employees, and the blend of three and four years was unanimously preferred, delivering a balance between maturation, flavor, and texture.
373: Bottled-in-Bond Organic Bourbon with Cathedral Ledge’s Chris Burke
Q: What was the initial plan for Cathedral Ledge in terms of bottling strategy?
From day one we aimed to achieve Bottled-in-Bond status and structured the four-year plan around that goal, using it as the backbone of our product timeline and marketing identity.
372: Onyx & Amber - The Art of Precision Blending
Q: What does the next 6 to 12 months look like for Onyx and Amber after winning an award?
They plan to maintain a disciplined pace, continue tasting everything in-house, and avoid chasing rapid expansion. The emphasis will be on high-quality, smaller-batch releases, a second guest blender series, and controlled growth to preserve flavor integrity rather than chasing volume or quick market movement.
372: Onyx & Amber - The Art of Precision Blending
Q: Tell us a little bit about how Onyx and Amber got started and what you aim to do here in the bourbon and whiskey community.
Onyx and Amber began from a bourbon club mindset and evolved into a small distillery concept that focuses on aging and blending in Colorado. The founders wanted to import the energy of community-driven barrel picks, balance sourcing with their own aging, and ultimately present a program that emphasizes quality, transparency, and the experience of exploring different barrels rather than chasing consistent, mass-produced profiles.
