古代女性难以获得受教育的机会，表达和写作对她们来说是一件奢侈的事情，写下来本身就是一种权力。这就导致，菜谱作为一种文本形式，很难由女性书写、更别说传播。
那时候，很多菜谱的作者都是文人，他们记录一道菜的做法，自己却并不下厨，菜谱里往往缺少具体的食材用量和操作细节——袁枚的《随园食单》便是如此，食材用量与操作细节往往语焉不详。还有一类菜谱，记录贵族王公的食物，用料难得、做法繁复，与普通人的厨房相去甚远。
