不知不觉，潮汕牛肉火锅已经火了十几年。
先是在电影里看到弹得可以打乒乓球的牛肉丸，夸张中带有一丝合理；到第一次在潮汕当地吃到极致新鲜、精准分割的不同牛肉部位的那种惊艳；再到后来一次次在外地吃潮汕牛肉火锅，却又总觉得差点意思。
对商家来说，潮汕牛肉是一门生意，也是一条环环相扣的供应链。而在爱吃这口的人眼里，它更是关于食物的艺术：用时间和距离浓缩新鲜，又用刀工解释了一头牛的无数种可能，实在是……非常了不起。

最近餐饮行业多了一个新名词：「板前中餐」。大部分传统中餐都是在后厨操作，做好之后再端到客人桌上。「板前」是日料的说法，以吧台作为更重要的呈现空间，厨师就在吧台后面操作，坐在吧台前的客人不仅能看到操作过程，也能随时和厨师交流。
为什么以前没有板前中餐？因为中餐油烟太大，厨师们当面做菜，客人的体验大概率不会太好。而且很多中餐厅的空间也很大，后厨和用餐区域明确区分开才更合理。那为什么现在中餐也开始板前化了？这就很值得聊聊了。
