这期播客聊的是一个我从刚做《厨此以外》就想聊的一个话题，简单地说，就是开餐厅到底有什么难的。这个话题当然有很多面啦，从产品、从运营、从现在外卖平台的趋势都可以聊。但我一直很想聊但没聊成的角度是：一些不常在消费者视野中出现的困难。一些外部的、突发性的，或者是自己无法改变的那种。
可想而知地，很多餐厅老板都拒绝了我这个邀请。他们觉得很不好聊，也没必要聊，所以直到现在我才做了这么一期说不上很完整的节目。作为餐厅老板和讲述者，很多事情很难用一种清晰有逻辑的方式去总结复述，只能在感受到结果之后不断作出应... more
我猜很多人在规划年夜饭的时候，多半都会规划该买什么菜、谁来掌勺、今年都来点什么新花样。但应该没几个人会提前想好，吃完年夜饭之后的残局该由谁来收拾吧？过年前的大采购、灌香肠和炸肉丸子，虽然琐碎且重复，却自带一种节日将至的期待感。而年夜饭之后收拾油腻的餐桌和碗筷，可能是整个过年期间最不浪漫、也最安静的时刻。
毕竟在那之前已经尽兴，真到了收拾残局的时候，热闹早就退了场。这个从未被提前分配和郑重讨论的环节，既无关团聚，也和创造没有任何关系。聊天、放鞭炮、看春晚，哪个活动都比洗碗来得轻松有趣。

就像下厨已经不再是很多人的日常一样，现在很多人过年也不怎么在家做年夜饭了。去餐厅吃要方便得多，餐前不用准备，餐后不用收拾。原本需要按部就班提前准备，一步步、一道道、一天天慢慢操持的年夜饭，被浓缩到了几个小时里，到点开始，又迅速结束。
但我身边也有一些同龄人或者更年轻的朋友，哪怕平时下厨的频次并不高，可真正到了过年的时候，也愿意提前琢磨菜单，在社交媒体上搜索并收藏自己想要大显身手的菜式。为一年到头最隆重的一顿饭，尽量做好最充分的准备。
