まっしろな磁器の小皿に盛って出される独特なスタイルの出石のそば。最初に出されたときはドギマギしました。この出石焼の小皿の「白」は、この地で採掘される「柿谷陶石」を原石として、昔から使われてきました。江戸時代中期の1700年頃に信州上田藩の仙石氏（仙石政明）がお国替えとなり、出石にやってきます。その際、一緒にきた信州のそば職人の技法が伝えられ、出石そばが誕生します。白いお皿にのったそばを食べなから、歴史に、長野とのつながりに思いをはせてみるのもまた一興です。
江戸時代の町並みが残り、重要伝統的建造物群保存地区に選定されている出石は、そば処でもあります。街にはおよそ40軒ものお蕎麦屋さんが軒を連ねています。5つの白い磁器の小皿に盛り付けて出されるという独特のスタイルの出石そば。街では「出石皿そば巡り巾着セット」が販売されていて、これを買い求めれば3軒のおそばを味わうことも可能です。薬味もつゆもさまざま。一日、タイムスリップしたように街を散策しながら、お腹が空いたらおそばというのも出石の楽しみです。
仙台でいただいたのは、七ヶ浜産のハマグリを使ったお椀。春のイメージが強いハマグリですが、「浜の栗」という名のとおり、秋のハマグリもまた格別の味わい。「煮ハマグリ」のお寿司も美味しいですが、若き寿司職人たちが握る、力のこもった一貫と、修行のために“握らない”という覚悟。それぞれの形で「寿司」と向き合う姿に、食の奥深さと人の温かさを感じます。お昼こそ寿司！シャリの量に込められた小さな工夫にも、江戸前の知恵と粋が息づいています。
