  • The only podcast I can listen to in the car with my wife

My wife actually finds the banter to be terribly entertaining and I find that *many/most* of their answers to issues that homebrewers actually face in the regular to be well-researched or at least a viewpoint that I can look up myself and verify that it’s wrong if it sounds hinky.

Josh is a genuinely entertaining host, and I deeply respect the knowledge that Todd and James bring to the table concerning both good basic practices and a strong traditional perspective on German beer styles and on w... more

Talking Points

Recent interactions between the hosts and their guests.

Unwanted Pellicle, Sprinkling vs Rehydrating Dry Yeast, & When to Rack Your Batch – Ep. 467
Q: How long should I leave the beer on the yeast cake before kegging to avoid butter flavors?
Typically finish time is 4-5 days for many beers with adequate yeast, but avoid prolonged contact on the yeast cake for delicate or light-bodied beers; cold-crash and clear before kegging, aiming for around day 10 for IPAs if possible.
Unwanted Pellicle, Sprinkling vs Rehydrating Dry Yeast, & When to Rack Your Batch – Ep. 467
Q: Should I rehydrate the dry yeast or sprinkle directly for a high-gravity stout?
Hydration is still recommended by many companies, especially for high-gravity beers, but some producers allow direct pitching. Use a yeast calculator, consider using extra cells, and assess the beer style and strain before deciding.
Unwanted Pellicle, Sprinkling vs Rehydrating Dry Yeast, & When to Rack Your Batch – Ep. 467
Q: Is the batch a total loss, or should I try to rack from underneath it and keg it immediately?
Rack from underneath it if you can, and consider a cautious salvage approach with Camden tablets or metabisulfite; if quality is severely compromised, don't risk the pipes and kegging system, but tasting a sample from below can help decide.
Flow Control Faucets on Column Towers, Carbonating Kegs at Room Temp, What to do with an Infected Bucket, & Replicating My Favorite Commercial Beer – Ep. 461
Q: Where should I start if I want to replicate New Glarus Kid Kölsch?
Start by reaching out to the brewery for advice on their yeast strain and recipe.
Flow Control Faucets on Column Towers, Carbonating Kegs at Room Temp, What to do with an Infected Bucket, & Replicating My Favorite Commercial Beer – Ep. 461
Q: Is an infected fermentation bucket compromised forever?
Yes, unless you can thoroughly clean it, it's better to discard it.
