  • The only podcast I can listen to in the car with my wife

My wife actually finds the banter to be terribly entertaining and I find that *many/most* of their answers to issues that homebrewers actually face in the regular to be well-researched or at least a viewpoint that I can look up myself and verify that it’s wrong if it sounds hinky.

Josh is a genuinely entertaining host, and I deeply respect the knowledge that Todd and James bring to the table concerning both good basic practices and a strong traditional perspective on German beer styles and on w... more

Talking Points

Recent interactions between the hosts and their guests.

Is Pressure Fermentation Worth It? The Good, Bad, and the Potential Geysers! | Episode 478
Q: Dave from Dallas asked about yeast health and pressure profiles, specifically PSI sweet spots for 3470 lager versus Kvike strains.
Temperature strongly governs PSI needs; 3470 can tolerate higher pressures (up to around 15 psi consistently, higher in some cases with careful management) while Kvike may have different tolerance; bottom-line is to monitor CO2 in solution and adjust pressure with temperature, using pitching temperature and a PRV to finish, rather than relying on fixed PSI across strains.
Is Pressure Fermentation Worth It? The Good, Bad, and the Potential Geysers! | Episode 478
Q: Roy wrote in about a Firmzilla and Spunding Valve dialed in, asking how to dry hop IPA under pressure without creating a massive hop geyser when opening the port.
The approach is to either add hops at the same pressure and purge oxygen before opening, or to use a hop bonding accessory and purge oxygen while keeping the vessel under pressure to allow hop uptake without rapid CO2 release; also consider cooling and managing hop addition to minimize nucleation and oxygen exposure.
The Golden Hive Update: Mead, Makers, CBC and HomebrewCon Asheville | Episode 477
Q: What was the premise of your Craft Brewers Conference presentation and how was it received?
The presentation focused on organic marketing and social media strategies for breweries, rather than brewing techniques, and it was well received for offering practical tools and case studies that demystify content creation for a traditionally marketing-averse industry.
Fixing Foamy Beer, Frozen Fruit Tips, & Easy Hop Subs | Episode 475
Q: How should Jim approach blueberry beer for a competition given different blueberry forms (extract, puree, frozen, concentrate)?
The guest suggests understanding how fruit fermentables behave; real fruit loses some blueberry character as sugars ferment, so consider using a mix of real fruit with non-fermentable sugars or lactose to maintain body and blueberry perception. For puree lacking FDA standard, explore safer alternatives like crystallized blueberry or fruit in a fermentable bag to manage solids and avoid clogging, and run bench trials to dial sweetness and carbonation.
3 Topics for Brewing Better Beer: Dry Hopping, Used Gear Tips, & Medaling at Competitions – Ep. 473
Q: I'm looking for your best practices on dry hopping, specifically regarding timing. Should I drop hops during high krausen or wait until fermentation finishes?
Dry hopping timing matters, but the consensus here is to avoid overthinking: many brewers dry hop around day five to seven to balance aroma with minimal oxygen exposure, and using bags or dedicated keg adapters helps minimize clogging and oxidation.
