  • The only podcast I can listen to in the car with my wife

My wife actually finds the banter to be terribly entertaining and I find that *many/most* of their answers to issues that homebrewers actually face in the regular to be well-researched or at least a viewpoint that I can look up myself and verify that it’s wrong if it sounds hinky.

Josh is a genuinely entertaining host, and I deeply respect the knowledge that Todd and James bring to the table concerning both good basic practices and a strong traditional perspective on German beer styles and on w... more

Talking Points

Recent interactions between the hosts and their guests.

Yeast Starters, Auto-Siphons, and Grain Mill Maintenance
Q: What about grain milling setup and maintenance for a three-roller vs two-roller mill, and how should one approach crush calibration and cleaning?
Start with the mill you have (two-roller is enough for most), calibrate with spacers, do a test crush, and refine crush size using feeler gauges or real-world feedback; maintain by cleaning and keeping it dry.
Yeast Starters, Auto-Siphons, and Grain Mill Maintenance
Q: What are best practices for minimizing cold-side oxidation when using an auto siphon, and should one purge the keg with CO2 before siphoning?
Closed or semi-closed transfers are best; purging with CO2 is helpful when possible, and using a quick disconnect can help maintain a CO2 blanket and reduce oxygen ingress.
Yeast Starters, Auto-Siphons, and Grain Mill Maintenance
Q: When is making a yeast starter critical versus a complete waste of time, and does target OG or batch size matter more?
A pitching calculator should guide the decision; starter is generally beneficial, especially for higher gravity or under-pitched scenarios, but under-pitching is the bigger risk than over-pitching.
Emergency Glycol Failures, Diacetyl Rests & Hop Alpha Acids Explained!
Q: Brian asks how alpha acids affect bitterness, especially when adding late in the boil or in dry hopping, and what the practical implications are for different hop varieties and processing methods.
They explain alpha acids indicate potential bitterness, but actual bitterness depends on boil time, hop variety, and processing (e.g., Noble hops, Cryo). Higher AA hops can still contribute bitterness in late additions, but the overall effect depends on utilization and timing; software and experience guide these decisions.
Emergency Glycol Failures, Diacetyl Rests & Hop Alpha Acids Explained!
Q: Patrick asks what to do best as a triage option when the glycol chiller fails during active fermentation and the ambient temperature climbs to 76 degrees, risking fusel alcohols or diacetyl formation.
The hosts suggest a mix of immediate, practical workarounds (towels with cooling, portable AC if available, or an ice bath in place) and a longer-term strategy like using a pressurized vessel or reducing heat load, emphasizing to monitor gravity and finish with care; if possible, consider finishing in a pressure vessel or using a plan to dump some pressure and then package once fermentation finishes.
