  • Thoughtful, informative, and entertaining

I enjoy listening to Jeremy's thinking and that of his guests on food, its origins, preparation, economics, politics, history, and everything else connected with it. The presentations are thoughtful, serious but leavened with humor and humility. The podcast doesn’t claim to provide definite answers but rather leaves one thinking, which is of great service in a world of food fads and panics.

Talking Points

Recent interactions between the hosts and their guests.

In Search of the Real Cheeses
Q: Was it always your idea to get a job, get in there, and then quit?
The host discusses the initial motivation and the long-term plan, and Trevor explains that he moved to Mongolia with a mission aligned to the company's aims but ultimately pursued a path toward understanding and documenting traditional cheese-making.
Old Modern Olive Oil in Provence
Q: What uses does the old-fashioned Provence oil have in cooking, and why is it valued despite not meeting some modern extra virgin standards?
The oil is used to dress salads and traditional Provençal dishes, harmonizing with bold ingredients like garlic, lardons, anchovies, and peppers; its unique fermentation-based flavor profile and texture make it a ceremonial, gourmet choice that appeals to olive oil connoisseurs, even if it isn't universally categorized as extra virgin.
Old Modern Olive Oil in Provence
Q: What is your take on the idea that there is no single best olive oil, and do you personally prefer modern or old-fashioned oil?
The guest explains that there is room for both styles depending on the dish: modern oil pairs well with a wide range of foods and can flatter vegetables, while old-fashioned oil offers a traditional, heavier flavor that suits particular preparations and contexts; if forced to choose, the guest would opt for modern oil for its versatility.
Cooking in Maximum Security
Q: How do they get these things?
They have like an internal supermarket and receive money from outside to buy food.
Cooking in Maximum Security
Q: Did you visit prisons in Chicago? Did you see the differences there?
I didn't visit prison in Chicago. It was only for one week.
