明治・大正から昭和初期にかけて、日本の都市には「残食」と呼ばれる食べものの流通が存在していた。食堂や学校、兵営、百貨店の勝手口から出た残食は、「残飯屋」を通じて都市下層の人びとの胃袋へと届けられていた。
本エピソードでは、東京市社会局の調査を手がかりに、残食が支えた都市の生活構造を読み解きく。さらに、戦時下の「もったいない」精神の形成、そして現代の食品ロス問題へ。残飯は単なる食べ残しではなく、社会と胃袋を結んだインフラだった。そんな視点から日本の近代と現代を見つめ直す。
