前回に引き続き、大和川酒造店 代表の佐藤雅一さんをお呼びして、酒造りの根幹を支える「米」について、情熱たっぷりの取り組みをたっぷり伺いました！
実は大和川酒造店、自社で賄っているもののスケールがすごいんです。
まず、お米の栽培から、脱穀、乾燥、精米まで、すべて自分たちの手でやっていること。
さらに、製造現場で使う電力は、喜多方にある会社から再生可能エネルギーで調達。
重油を削減するため、喜多方や会津の森林資源（間伐材チップ）やお米の籾殻を使うバイオマスボイラーも導入しています。

大和川酒造店では、自社米の製造がとっても盛ん。なんとお酒の醸造量（1500石）が造れる3倍の量のお米を作っているんだとか…！
