世界的な淡水不足や異常気象が進むいま、地元の水と米で酒を造り続けているのが、渡辺酒造醸の女性杜氏・渡辺朝子さんです。近年の猛暑による米質の変化を肌で感じながらも、伝統の技で「白雪姫」やどぶろくを醸しています。おいしい酒には、山・川・平野が一体となった水の循環が欠かせない。だからこそ大垣の水の価値を発信し続けることが、豊かな環境を次世代へつなぐ鍵になる――渡辺さんの言葉には、そんな確信がありました。
創業80年の「田辺温熱保養所」では、伊吹山の薬草と大垣の水を使った伝統の樽蒸し風呂を体験できます。始まりは戦後、病を治すための湯治でした。薬草の蒸気が満ちる暗い樽の中で自分と向き合い、汗を自然に冷ましながら成分を肌に染み込ませていく――それがこの風呂の流儀です。水風呂を使わずに深い満足感が得られる体験を、小山さんは「細胞が生まれ変わる感覚」と表現。大垣ならではの健康法に、水の恵みの深さを実感していました。
豊かな水の恩恵を受けてきた大垣は、同時に洪水と向き合い続けてきた土地でもあります。そこで育まれたのが、集落ごと堤防で囲む「輪中」という独自の文化。石垣を高く積んだ「水屋」、滑車で二階へ引き上げる「揚げ仏壇」、軒下に吊るした脱出用の「揚げ舟」など、命を守る工夫が暮らしの中に息づいています。自然をねじ伏せるのではなく「うまく受け流す」。このしなやかな姿勢は、現代の防災にもそのまま通じる知恵です。
岐阜県大垣市は、街の至る所から地下水が湧き出す「水の都」。松尾芭蕉が『奥の細道』の旅を終えた「結びの地」でもあります。芭蕉がここを終着点に選んだのは、川舟でそのまま伊勢へ向かえる水運の便利さに加え、旅の疲れを癒し、心を許し合える門人や友人がこの地にいたから。学芸員の上島さんは、変化の中に変わらない本質を見出す「不易流行」の精神を引きながら、300年以上守られてきた水の文化を次の世代へ手渡していきたいと話してくれました
