Yep, so the lamb, hands down the leg, bone roller leg, cure it, rub it, perfect because it holds the moisture in that little bit of fat to it. The brisket on the beef is the same thing. It holds that moisture, holds the fat, cooks up well. For turkey, I go the thigh for the fat content in the thigh; breast is just dry.
