Talking Points

Recent interactions between the hosts and their guests.

Mike Paladini and Danny Polise, founders, Penelope Bourbon
Q: Why did MGP acquire Penelope, and what changed after the deal?
The acquisition was driven by growth potential and the desire to scale with a real marketing and sales engine. Post-acquisition we gained access to a larger team and distribution while continuing to innovate with finishes and new releases.
Mike Paladini and Danny Polise, founders, Penelope Bourbon
Q: How did you decide to start Penelope Bourbon with three mashbills from MGP?
We were chasing good liquid with little risk, starting small, and learning by doing. Blending different mashbills on-site taught us what actually works, and the process evolved into a structured product with room for variation and refinements.
#155, Tobin Ellis, veteran bartender, author of “Bar Design Essentials", champion flair bartender, principal of Barmagic design studios (Las Vegas & New York) 30 March 2026
Q: What do you think bartenders should be physically doing to get better and faster and prevent injury?
Bartenders should constantly self-assess their movements, seek to minimize awkward reach and twists, and adopt neutral spine ergonomics; focus on biomechanics over flashy gear, and adapt pouring and ice-handling techniques to reduce repetitive strain.
#154, Andrew Merinoff, Co-founder & Investor Chinola Liqueur, Coconut Cartel, Empirical Spirits, Matchbook Distilling, Seven Rooms, & more
Q: Can you share the origin story of Chinola and how it evolved from a kitchen project to a global brand?
Chinola began when an Austrian liqueur blender partnered with a Dominican entrepreneur; a passion fruit liqueur was born in a Dominican Republic setting, tested in New York, refined through early bottles that separated and browning issues led to innovations like a shell‑stable, fresh fruit approach. Over years, the team perfected production techniques, secured Dominican Republic sourcing, and expanded into additional fruit lines as demand grew.
#152, David Vogel, founder, Badger Bevs premium mixers, 9 March
Q: What gap in the market did you see and how did Badger Bevs address it?
The market was dominated by established mass brands delivering inconsistent quality and packaging. Badger Bevs aims to fill the gap with a premium, restaurant-quality liquid, superior carbonation, and branding that communicates sophistication and tenacity, specifically targeting high-end on-premise channels before expanding into retail.
