  • Next stop Omaha!

I don’t live anywhere near Omaha but I love Dan Hoppen’s podcast for its insights into good food and the restaurant business (material that can apply to almost anywhere in the country).

Hoppen asks great questions and clearly loves his city and its eateries. The recent episode about an innovative couple who run a food truck was especially good.

Omaha is now near the top of my bucket list thanks to this podcast.

  • Unbearable

If Dan didn’t have followers from his church no one would be listening to this. His hot takes are just plain lame. Mediocre dude who appeals to old people and raves over crappy food.

  • Needs an uplift . Having guests on 4x is boring

I liked this podcast in the beginning but now it’s all repeat guests but “live”. Nothing new or exciting anymore the same guests repeat the same stories .

Culinary School Truths with Brian O'Malley
Q: What makes Metro's program stand out compared to traditional culinary programs?
Its integration of classroom theory with restaurant operations, a focus on guest experience, sustainability, and business acumen, plus a mentoring culture that helps students grow together rather than compete against each other.
Culinary School Truths with Brian O'Malley
Q: To go to culinary school, to get on the job training, which provides more value?
Both have value; culinary school accelerates foundational learning and reflective practice, while on-the-job training delivers real-world intensity and hands-on repetition that can't be fully replicated in a classroom.
Ismara Gonzalez—Isla Del Mar
Q: Where did your initial culinary inspiration come from, and why did you go into an industry that is so demanding?
Inspired by childhood experiences and a desire to share joyful, inclusive meals with family and guests, Ismara pursued cooking as a way to connect people, leveraging training and mentorship to build a resilient hospitality career.
Ismara Gonzalez—Isla Del Mar
Q: How did you decide to expand beyond seafood to include birria, beef, and other items during the pandemic?
The pandemic forced experimentation; adding beef, birria, and chicken created options to sustain business when seafood demand shifted, and those items continued to be popular even after the restrictions eased.
Ismara Gonzalez—Isla Del Mar
Q: What is it about birria that makes it so fun to play with and incorporate in different dishes?
Birria provides a flexible, proteiny base that can be adapted across many formats, allowing creative twists like birria ramen, tacos, and pizza while still honoring its core flavors, which helps Isla Del Mar stand out.
