Q: Can you share the story behind Wasted and what readers can expect from your second book project?
Wasted started from My own experiences in kitchens and hotels where vast amounts of produce were thrown away, and I began documenting how we can value what's discarded—through fermentation, pickling, and smarter procurement—so both homes and restaurants can minimize waste and reconnect with the full life cycle of food. The new book will trace the origins of our current system, reveal how good intentions went astray, and offer practical, lifestyle-friendly changes, including policy considerations and broader systemic insights.

Q: How did your path as a disruptor in the food world begin, and what catalyzed your shift toward a more informed approach to cooking and sourcing?
The idea of disruption was sparked by recognizing how the whole supply chain treats people and ingredients, not just what's on the plate. Over 35 years of cooking, I moved from the chef's creativity to asking who benefits at every step—farmers, workers, and communities—and that led me to advocate for transparency, fair pay, and better sourcing. It became clear that meaningful change comes from sharing information and empowering eaters to make informed choices, rather than simply calling out flaws from a soapbox.
