人にとっては健康イメージが強い「リノール酸」は、ルーメン細菌を窒息死させる猛毒であるという少し刺激的な話。飽和脂肪酸と不飽和脂肪酸の違い、オレイン酸と肉の口溶け、ルーメン細菌による水素添加、バイパス脂肪、そして夏場の乳脂肪低下に関わる「共役リノール酸(CLA)」まで、牛の体内で起きている複雑な脂肪酸の物語。乳脂肪が落ちたから脂を足せばよい、とは限らない。暑熱期の飼養管理を考えるヒントになれば幸いです。
