Think the cowboys missed a bit of farming & geography. Historically Beef cattle are in the south & west because the land is too dry & sparse to support crops. Land in the North is moist & fertile so best used for grains such as corn. Dairy cattle need to eat stored grain and be handled twice per day so dairy farms are much more suited to these areas. Also why beef cattle are called ranches and dairy are called farms
