蛋挞的精酿之旅，始于悠航的那杯“双倍第一仙”：“那时候觉得世界上怎么有这么好喝的啤酒，甚至产生了‘为了这杯酒，我都得留在北京’的想法。” 他开始认真研究啤酒风味，加入了北京自酿协会，走上了自酿之路。2019 年，一个台湾朋友喝了他酿的酒后，提议一起开店，最初计划在北京开，但最后店却开在了蛋挞的老家——江门新会。
“石狗巷”是蛋挞童年时生活的巷子，如今已经不复存在。小时候的回忆被时间冲淡，但乡愁却随着离家越久而越发强烈。他决定用这个消失的巷子命名自己的精酿品牌。
