    This is the most genuine, honest, and inspiring podcast-- Italian culture explained through science, history, and emotions. Paolo is a magnificent and welcoming host, and serves themes that challenge the usual "gastronomic" ideas. Although it is a show about food, it is founded in the meanings of food, how we get things on the plate, and why they might be arranged that way.   • Informative and funny!

    This is a great addition to the informative and hilarious blog, "Quatro Formaggio," which I've been enjoying for some time. Paolo tries to understand and then undo all the strange creations that find their way to the North American dinner table. What makes him such an authority? Well, he's Italian, of course! Great stuff.
